Rule #55: Let an Empty Glass Be

Don't be in a huge hurry to clear away someone's drained or empty glass. If the bar is mellow and other customers aren't helicoptering for a seat, wait until your customer cues you with a request for another round or the check. Some of my hardest laughs and best cries have happened over melted ice cubes or a few drops of wine. Let people end the night on their terms, not yours.
