Ingredients
1 pound chicken cut into small chunks
2 cups shiitake mushrooms
4 garlic cloves
1 tablespoon finely chopped ginger
1 red bell pepper, chopped
2 cans water chestnuts, chopped
3 scallions, chopped
4 tablespoons hoisin
2 tablespoons soy sauce
1 large iceberg lettuce
2 tablespoons vegetable oil
Heat the oil in a sauce pan. Cook the chicken with the garlic and scallions until the chicken begins to cook through. Add the remaining ingredients, except for the lettuce. Cut the iceberg lettuce in half and peel away pieces for cups. Scoop the chicken ingredients into the lettuce and serve.
